SUPERFOOD SALAD WITH BLACK GARLIC

Superfood Salad with Black Garlic

SERVES: 2

PREP TIME: 10 minutes | COOK TIME: 15 minutes

INGREDIENTS

Salad

40g quinoa

200ml water

3 cloves The Original Black Garlic, finely sliced

Handful of fresh spinach

Handful of fresh parsley

2 radishes, thinly sliced

¼ avocado, chopped

Sprinkle of pumpkin and sunflower seeds

Dressing

1 tbsp organic, raw, unfiltered apple cider vinegar

3 tbsp organic extra virgin olive oil

1 tsp honey

½ tsp Dijon mustard

Salt and pepper, to taste

METHOD

Rinse the quinoa thoroughly in a sieve under cold water. Add to a saucepan with 200ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until cooked. Drain and let cool.

In a mixing bowl, combine the cooked quinoa with spinach, parsley, radishes, avocado, seeds, and black garlic.

Whisk together the vinegar, olive oil, honey, Dijon mustard, salt, and pepper until emulsified.

Pour the dressing over the salad, toss well, and enjoy fresh.
