BLACK GARLIC PUMPKIN BREAD

PREP TIME: 30 minutes | COOK TIME: 35 mins
INGREDIENTS
500g strong white bread flour
7g instant yeast
10g salt
340g warm water
2-3 tbsp Original Black Garlic Powder
METHOD
Combine the flour, yeast and salt in a large bowl. Add the warm water and mix until a shaggy dough forms.
Turn the dough out onto a clean surface and knead for around 8 minutes until the dough becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let rise for 1.5-2 hours until doubled in size. Placing the bowl in a warm spot will speed the process up.
Knock the dough back, then use your hands to form it into a tight ball. Using kitchen string, wrap it around the dough to create 6-8 pumpkin segments, tying loosely so the dough can expand.
Brush lightly with water and sprinkle the black garlic powder over the surface for colour and aroma.
Let the loaf rise for another 40 minutes.
Whilst the dough is rising - preheat the oven to 220°C (200°C fan) and place a large dutch oven inside. You can also open bake this loaf using a baking tray if you don’t have a large vessel with lid.
Using a bread lame or sharp knife, score the loaf with a decorative leaf effect
Bake for 35-40 minutes until deep golden and crusty. Remove from the oven, place the loaf on a cooling rack and remove the string as soon as it’s cool enough to handle.
Optional but fun! Insert a cinnamon stick or small stalk into the centre to enhance the pumpkin effect. Cool fully before slicing.
