Orange, Rocket, Pistachio, Pomegranate & Mozzarella Salad with Black Garlic Dressing

Ingredients

1/2 lemon, juiced

1 tsp smooth Dijon mustard

1 tsp maple syrup

2 tsp Black Garlic paste (or 4 cloves Black Garlic, crushed)

2 tbsp extra virgin olive oil
For the salad ingredients:

1 navel orange, peel removed and sliced into segments

100g fresh rocket
-
125g ball buffalo mozzarella
-
Seeds of one small pomegranate

30g fresh mint
-
30g fresh basil
-
30g pistachios, roughly chopped

Place the lemon juice, Dijon mustard, maple syrup, and Black Garlic paste into a bowl and whisk to combine.
Slowly stream in the olive oil, whisking constantly, until you have a smooth, emulsified dressing. Lightly sprinkle with salt and pepper.
Pour the dressing over the rocket and toss to coat.
Spread out onto a serving tray
and arrange the orange, buffalo mozzarella, pomegranate seeds, mint, basil and
pistachio on top.
