Mushroom & Black Garlic Carbonara
vegetarian alternative to the chicken & bacon carbonara recipe

360g pappardelle

4 black garlic cloves chopped

2 garlic cloves crushed

350g mixed mushrooms

3 eggs

100g grated Pecorino

Fresh basil to finish

Whisk together the eggs in a bowl and stir in the grated Parmesan.
Bring a pan of water to the boil for the pasta.
Whilst the pasta is cooking, heat a frying pan and add 2 tbsp oil and the black garlic and crushed garlic. After a minute add the mushrooms and butter. Season well and sauté for 3 minutes.
For the final 3 minutes, add the tender stem to the pasta water. Lift out the broccoli and set aside.
Drain the pasta reserving 3 tbsp water.
Return to the pan and stir through the garlic mushrooms and the egg/cheese mixture. Serve sprinkled with the basil
