MUSHROOM AND THE ORIGINAL BLACK GARLIC CARBONARA

MUSHROOM AND THE ORIGINAL BLACK GARLIC CARBONARA VEGETARIAN ALTERNATIVE TO a traditional CHICKEN & BACON CARBONARA RECIPE  

serves - 4 people         difficulty - easy        prep time - 15 mins

Ingredients 

  • 360g pappardelle

  • 4 black garlic cloves chopped

  • 2 garlic cloves crushed

  • 350g mixed mushrooms

  • 3 eggs

  • 100g grated vegetarian hard cheese

  • 360g pappardelle

  • 2 tbsp olive oil

  • 4 cloves The Original Black Garlic – chopped

  • 2 cloves white garlic – crushed

  • 350g mixed mushroom - sliced

  • 25g butter

  • Salt and pepper

  • 300g Tender stem broccoli

  • Fresh basil to finish

​TO MAKE

  • Whisk together the eggs in a bowl and stir in the grated vegetarian hard cheese.

  • Bring a pan of water to the boil for the pasta. Cook as per instructions on the packet.

  • Whilst the pasta is cooking, heat a frying pan and add 2 tbsp oil and the black garlic and crushed garlic. After a minute add the mushrooms and butter. Season well and sauté for 3 minutes.

  • For the final 3 minutes, add the tender stem broccoli to the pasta water. Lift out the broccoli and set aside.

  • Drain the pasta reserving 3 tbsp water.

  • Return to the pan and stir through the garlic mushrooms, the egg, cheese mixture and the reserved pasta water. Serve sprinkled with the basil.
