happy hummus

a delicious twist on this classic side dish. enjoy this surprising hummus with the richness of black garlic added for a depth of flavour 

 

Ingredients

  • 500g raw aubergines

  • 400g chickpeas, drained

  • 15 Black Garlic cloves, smashed (30g paste)

  • 1 raw garlic clove, minced

  • 4 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 tbsp tahini 

  • 1 tsp salt (or to taste)

  • 1 tsp dry red paprika powder

  • 1 tsp dry cumin powder

  • 1 tsp white pepper

Optional: 1 tbsp fresh cilantro or coriander leaves, minced or finely chopped.

To serve: Drizzle of olive oil and lemon juice.

 

Preheat oven to 200C/392F.

Coat aubergine pieces in olive oil and arrange them on a baking in a single layer.

Roast for 30 minutes and allow to cool down before adding them to a food processor.

Add all remaining hummus ingredients and process to desired consistency.

Serve with drizzle of olive oil and lemon juice.
