black garlic hummus in 6 delicious ways

a twist on this classic side dish. enjoy this surprising hummus with the richness of black garlic added for a depth of flavour 

INGREDIENTS

Plain Black Garlic Hummus

​

  • 400g can chickpeas, drained (drained weight: 250g)

  • 3 tablespoons lemon juice

  • â…” teaspoon cumin 

  • 1 large raw garlic clove, minced

  • 8 tablespoons water (about ½ cup)

  • 2 tablespoons olive oil

  • 1 tablespoon tahini 

  • 30g Original Black Garlic cloves 

  • ½ teaspoon salt or to taste 

 

Black Garlic Sun Dried Tomato Hummus

​

  • 1 x batch of Plain Black Garlic Hummus

  • 4 tablespoons sun dried tomatoes in oil, finely chopped

  • 2 tablespoons oil from the sun dried tomatoes jar

 

Black Garlic Avocado Hummus

  • 1 x batch of Plain Black Garlic Hummus

  • 2 Hass avocados

  • Pinch of cayenne pepper or chilli powder, to taste

  • 1 tablespoon of lemon or lime juice

 

Black Garlic Ginger Hummus

  • 1 x batch of Plain Black Garlic Hummus

  • 1 teaspoon minced ginger, raw

 

Black Garlic Caramelised Onion Hummus

  • 1 x batch of Plain Black Garlic Hummus

  • ½ lb (225g) yellow onions, note that this is the weight of peeled and chopped onions

  • 4 tablespoons of olive oil (or 2 tablespoons of olive oil and 2 tablespoons of butter if you don’t follow vegan diet)

  • Pinch of salt

 

Black Garlic Cumin Coriander Hummus

  • 1 x batch of Plain Black Garlic Hummus

  • 1 tablespoon ground cumin 

  • 1 tablespoon ground coriander

  • 3 tablespoons olive oil

TO MAKE

Plain Black Garlic Hummus / Black Garlic Sun Dried Tomato Hummus / Black Garlic Avocado Hummus/ Black Garlic Ginger Hummus

  1. Place ingredients of individual recipe ingredients in a food processor and whizz them all up until smooth. This might take several goes.

 

Black Garlic Caramelised Onion Hummus

​

  1. In a large pan set over medium low heat, cook onions with a pinch of salt in oil. This should take about 20 minutes. Don’t try to cook them faster as they will brown instead of caramelising and you’ll lose out on some sweetness.

  2. Place all the plain hummus ingredients in a food processor and follow with the caramelized onions. Whizz them all up until smooth. This might take several goes.

 

Black Garlic Cumin Coriander Hummus

  1. In a small pan set over a medium low heat, bloom (cook) ground cumin and coriander in oil until toasty and fragrant, about 2-3 minutes.

  2. Place all the plain hummus ingredients in a food processor and follow with the cumin coriander oil mixture. Whizz them all up until smooth. This might take several goes.
