Only once in a blue moon does a brand new food ingredient arrive on the market. Rarer still is one as exciting as Black Garlic! Rich in taste and very different in texture, it can be regarded in the same way as saffron or truffles; adding a depth of flavour far out of proportion to the quantity used. Like these ingredients, it is rare and exclusive.
We have prepared a selection of 35 recipes which we think shows black garlic at its best. At the same time we have appealed to the greatest possible range of palettes.
Of course these represent only the beginning of what we are confident will become a great and exciting culinary journey with Black Garlic.
