Broad bean, Chilli and Black Garlic Dip
Ingredients
- 300g of frozen broad beans Cook in boiling water. (Follow the instructions on the packet) Drain and leave to cool down.
- 3 tablespoons of extra virgin olive oil (enough to make the mixture smooth)
- 3 cloves of peeled black garlic – chopped
- Half a red chilli deseeded and chopped
- A generous squeeze of lemon juice (according to taste)
- Salt and black pepper
Instructions
Place all the ingredients with the exception of the lemon juice into a food processor. Process until smooth.
Season to taste with salt and pepper. Add the lemon juice.
Garnish with fresh chopped mint (optional).
